Pecan Muffins

Quick, easy, and moist pecan pie muffins. Makes 18 small muffins.


Ingredients:

  • 1 cup brown sugar
  • 1/2 cup flour
  • 1 cup pecans (diced)
  • 2/3 cup butter (soft)
  • 2 eggs

Instructions:

  1. Heat oven to 350 F (175 C). Grease and flour mini tin.
  2. Combine sugar, flour and pecans in a bowl. In another bowl, beat together the butter and eggs. Combine with dry mixture just until moist. Fill cups to two thirds.
  3. Bake for twenty minutes. Cool on wire rack.
